Today, my afternoon snack was a (almost) paleo blueberry bar. It’s actually a recipe I found for paleo cookie bars but I modified it to have blueberries instead of chocolate chips. Totally delish! As you can see, there wasn’t much left of it, either.

    • Hi! Sorry I didn’t get back to you sooner – my last few days have been swamped!! To answer your question, for me it’s not a matter of like or dislike. I have hypoglycemia or carb intolerance so I can’t really eat another way. And, I don’t do true paleo. I include dairy and can’t use honey or maple syrup as I’m way sensitive to all carbs/sugars.

      • No no, you’re fine! That’s interesting to hear actually. I have some freak health issues that not only make me unable to eat gluten and various other foods but sugars actually feed an infection in my throat (tmi sorry). Anyway I have been curious about the paleo if it would help me. Thanks for getting back to me!

  1. I, too, can’t eat gluten. (intolerant) and yes, I do enjoy paleo I guess but in a way, only because I have to. LOL I often wish I could eat just anything but I feel better not eating that stuff so in the end, I’m way better off. Good luck with your health stuff and hope it heals quickly! πŸ™‚
